Coconut Bars

My latest recipe, don't think these will last long:



Coconut bars

Ingredients
17 digestives
4oz butter
4oz sugar
1 can condensed milk
14oz desiccated coconut
12oz chocolate
2 tbsp peanut butter

Method
·        Preheat the oven to 170C
·        Crush the digestives and mix with the melted butter and sugar
·        Press into a 9” x 13”  baking tray and bake for 10 minutes
·        Meanwhile combine the milk and coconut
·        Spread this over the base, return to the oven for a further 20 minutes
·        Melt the chocolate and stir in the peanut butter
·        Spread over the coconut layer
·        Cool and slice into bars.

Cookie Swap



For the first time this year I partook in the the Great Food Blogger Cookie swap. Here is my recipe:

  • 225g butter, softened
  • 225g caster sugar
  • 170g tube Carnation Condensed Milk
  • 200g oats
  • 150g self raising flour
  • ½ tsp cinnamon
  • 150g raisins

  1. 1. Preheat the oven to 180◦C, (160◦C for fan ovens), Gas Mark 4.
  2. 2. In a large bowl, cream the butter, sugar and condensed milk until pale. Mix in the flour, oats and cinnamon and then finally the raisins.
  3. 3. Roll the dough into 20 golf ball sized balls and place on baking trays, spacing well apart.
  4. 4. Bake for 15 minutes until golden.

Chocolate brownies

This is my next recipe using the foodie ingredients, chocolate brownies! With a twist I used the scrummy chilli chocolate.




Melt 7oz chocolate in a bowl over a pan of simmering water.




Cream together 8oz butter and 10oz soft brown sugar until smooth.




Add 4 eggs and the melted chocolate and beat in.



Fold in 3oz plain flour 1/2 tsp baking powder 3 tbsp cocoa powder and 4oz chopped nuts (I use walnuts).



Pour into a lined and greased tin about 9"x9" and bake at 180C fan for about 25 mins.

Turkish delight

My first recipe using my foodie ingredients is Turkish delight, and it's surprisingly easy:


Ingredients

oil for greasing
1 oz powdered gelatine
9 fluid oz (UK) water
4 tsp rose water
1 lb caster sugar
3-4 drops red food colouring
1tbsp icing sugar
1tbsp cornflour




 Mix the gelatine, water, rose water and sugar in a LARGE saucepan
Heat until the sugar dissolves, stirring continually.
 Bring to the boil without stirring and simmer for 20-25 minutes.
It will expand and you really do need a big pan!

 Remove from the heat and stir in the colouring.

Pour into a greased tin and leave for 24 hours.

Cut the turkish delight into cubes and cover in the combined icing sugar and cornflour.

Store in an airtight box

Eggs in Purgatory

Nigella Lawson's new programme is on TV now and the first episode was really good. today's lunch was a recipe from that episode, it was yummy:

Eggs in Purgatory

1 clove garlic
1 pinch chilli flakes
1 tin chopped tomatoes
1 egg
bread


Fry the minced garlic and chilli flakes in a hot dry pan for 30 seconds.
Add the tinned tomatoes, stir and sizzle.
Break the egg onto the top and allow to poach in the tomatoes.
Once the egg is cooked and the yoke still runny remove from the heat.
Allow to sit for a couple of minutes before diving in with the bread.
Enjoy!
